Here are 3 lip smacking Mexican dishes which will tickle the taste buds of any food lover-
Almost all the Mexican dishes incorporate tortillas. While tortillas are easily available in market you could also make them at home. Here is quick and easy way to get started with corn tortillas recipe:
Ingredients- 2 cups Corn flour (Makai ka Atta)
Water- 1- 1 ½ cups
Put flour into a bowl, add water and mix into a soft dough that just holds together. Cover the bowl with a cloth and leave for 15 minutes.
Preheat gas oven to medium. Knead dough lightly and shape into balls, press them and flatten out. Cook in a non stick pan for a minute until it starts to curl.
#2 Tortilla flutes or flautas-
Unbaked tortillas- 24
2 tomatoes- peeled, seeded and chopped
1 small onion and garlic clove, chopped
2-3 tbsp vegetable oil
2 freshly cooked chicken breasts, shredded
Salt to taste
Place 2 tortillas overlapping. Put tomatoes, onion and garlic in a mixer and puree it. Season with salt. Heat 1 tbsp oil and cook puree add corns and other veggies you wish to, remove from heat and stir in shredded chicken. Fill the tortillas and pin with a toothpick or a long clove. Heat oil in a pan and fry the flutes. Serve with sliced radishes, cucumbers and olives. You could also set aside a bit of the puree as a dip.
14 tortillas, unbaked
For filling- 1 cup grated cheese
3 chillies seeded and cut into strips
Salt to taste
Oil for shallow frying
Combine cheese and chilli (jalapenos, olives, corn if you please) in a bowl, season with salt and set aside.
Fill tortillas, seal the edges well.
Heat oil in a frying pan and fry tortillas in hot oil until crisp. Take out and drain excess oil on a tissue paper and serve with sauce and salad.
#3 Mixed Tostadas
14 tortillas unbaked
1 cup- Rajma
1 shredded iceberg lettuce
2 cooked chicken breasts or turkey,_ thinly sliced (lightly fried chicken can also be used)
1 cup grated cheddar cheese
Jalapeno to taste
Guacamole- Mash avocadoes with a squeeze of lime juice, chopped coriander, little crushed garlic, chopped spring onions, salt and green chillies.
Heat oil in a pan and fry the tortillas until golden brown and crisp. Spread each tortilla with a layer of beans and lettuce. Spread a layer of chicken on top of the lettuce. Spread a layer of guacamole and then top it with a layer of cheese.
